Two types of garlic, each with its own flavor characteristics: Dried garlic from Southern Italy provides both sharpness and a lovely lightly roasted sweetness. Black garlic from Cordoba adds the sought-after and indispensable umami effect.

Two types of pepper: The wonderful Thysmada black pepper from Sri Lanka, with its rich, aromatic flavor, and a mild red chili pepper from Spain, which gives the perfect hot touch.
