LAMB WITH SHAWARMA HACK (serves 4)

Shawarma:
300g lamb fillet
2 red onions
2 tbsp Shawarma Hack
3 tbsp olive oil
Tabouleh:
2 dl couscous
2 red onions
1 handful flat-leaf parsley
1 handful mint
1 pomegranate
2 tsp Za'atar
Dressing:
Zest of 1 organic lemon
Juice of ½ lemon
4 tbsp olive oil
Salt and pepper
Tahini cream:
2 dl Greek/Turkish yogurt
2 tbsp light tahini
1 tsp garlic powder
Serving:
4 pita or flatbreads
Preparation:
Slice the meat and onions into thin strips. Mix Shawarma Hack with olive oil and pour it over the meat and onions. Massage it well into the meat and onions and let it marinate in the fridge for at least 1 hour, preferably longer.
Tabouleh with Dressing:
Prepare couscous according to the package instructions and let it cool. Finely chop the herbs and mix with the couscous and finely chopped red onions. Remove the seeds from the pomegranate and add them to the salad. Mix all the ingredients for the dressing and toss it into the tabouleh. Sprinkle with Za'atar.
Tahini Cream:
Mix all the ingredients for the tahini cream together and taste for seasoning.
Meat:
Sear the marinated meat in a hot pan with a little neutral oil for 6-8 minutes, until it forms a crispy crust. Serve with tabouleh, tahini cream, and warm pita or flatbread.
