Crème Brûlée with Tonka Beans

The Tonka bean has become a sought-after ingredient in the world of desserts, and for good reason. Known for its intense, complex aroma that combines vanilla, sweet woodruff, and bitter almond, the Tonka bean elevates any dish it’s added to. Some also detect hints of sandalwood, magnolia, clove, and even pear, making it a versatile and intriguing flavor. This luxurious crème brûlée is a perfect example of how the Tonka bean can transform a classic dessert into something extraordinary.

Crème Brûlée with Tonka Beans

CRÈME BRÛLÉE (serves 6)

With just a few simple ingredients, this indulgent treat is both rich and delicate, with a creamy custard base and a crisp caramelized sugar top. Prepare it the day before and you’ll have a showstopping dessert that will impress your guests. The smooth, silky texture and fragrant notes from the Tonka bean make it a dessert that’s sure to delight every time.

INGREDIENTS

500 ml heavy cream
6 egg yolks
100 g sugar
½ tsp Vanilla Powder
1 finely grated Tonka Bean

DIRECTIONS

Preheat the oven to 140°C (285°F). Start by whisking the egg yolks, vanilla, and sugar together until well combined.

Finely grate the Tonka bean. Place the Tonka bean and cream in a saucepan and slowly bring to a boil. Remove from heat just before it reaches boiling point.

Carefully and gradually pour the hot cream into the egg mixture, whisking continuously.

Pour the entire mixture into six ovenproof ramekins and bake at 140°C (285°F) for about 40 minutes, or until the custard has set.

Once baked, let the crème brûlées cool in the fridge for at least 4 hours, or overnight.

Just before serving, sprinkle sugar over the surface and caramelize with a kitchen blowtorch to create a crispy top.

Tip: If you don't have Tonka beans, you can substitute with vanilla.
