INGREDIENTS

Tomato Sauce:
2 red onions
4 cloves garlic
2 red bell peppers
2 cans of chopped tomatoes
2 tbsp olive oil
1 tsp Rose Harissa
1 tsp sugar
Pyramid salt
Black pepper

Meatballs:
600g ground beef
3 tsp dried oregano
2 cloves garlic
Zest of ½ lemon
1 tbsp coarse mustard
1 egg
4 tbsp breadcrumbs
Pyramid salt
Olive oil

DIRECTIONS

Peel and finely chop the onions and garlic. Clean the bell peppers and cut them into strips. Heat olive oil in a large, hot pan and sauté the onions and garlic until softened. Add the bell pepper strips, chopped tomatoes, Rose Harissa, sugar, salt, and pepper, then let it simmer on low heat for about 40 minutes (the longer, the better).
Taste and adjust seasoning if needed, then blend the sauce to a smooth consistency. Pour the sauce back into the pan.

In a bowl, mix together the ground beef, oregano, finely chopped garlic, lemon zest, mustard, egg, and breadcrumbs. Season with salt and pepper until the mixture is smooth. Shape the mixture into small meatballs and fry them golden in olive oil on a hot pan.

Once the meatballs are cooked, add them to the tomato sauce and let everything simmer for another 5-6 minutes. Top with a generous amount of fresh cilantro and serve with flatbread. This dish pairs wonderfully with couscous, bulgur, quinoa, or rice.

Enjoy your meal!
