Saint Jacques Carpaccio with Seven Pepper Crush

SAINT JACQUES CARPACCIO (side dish for 4 people)

Seven Pepper Crush is a bold, aromatic blend that brings layered warmth and gentle heat to delicate ingredients. Paired with bright Citrus Salt Flakes and floral pink peppercorns, it enhances flavour without overpowering—perfect for raw dishes where balance is everything.

INGREDIENTS

8–10 king scallops (fresh or fully thawed)
3–4 tbsp good-quality olive oil
1 tsp Seven Pepper Crush
½ tsp Citrus Salt Flakes
6–8 whole pink peppercorns
Fresh dill and finely chopped chives, to serve

DIRECTIONS

Slice the scallops into thin rounds and arrange them on a chilled plate in a single layer.

Drizzle generously with olive oil, then sprinkle over the Seven Pepper Crush and Citrus Salt Flakes.

Scatter over the whole pink peppercorns and finish with freshly chopped dill and chives.

Serve straight away while beautifully fresh. Delicious as a light and elegant starter, especially with a glass of chilled sparkling wine.
