Potato Salad with Red Dukkah

POTATO SALAD (side dish for 4 people)

No sugar snaps or radishes on hand? No problem – use what you’ve got. Asparagus, kohlrabi, cucumber, or carrots work beautifully too. This one’s meant to be easy.

INGREDIENTS

New potatoes, cooked
Sugar snap peas (or other greens – like asparagus or kohlrabi)
Radishes (or carrots, cucumber, or whatever you have)
Red Dukkah
Olive oil
Salt
Fresh basil or other herbs for topping

DIRECTIONS

Rinse and prep your vegetables.

Halve the potatoes and sugar snap peas.

Slice the radishes – some thinly, some a little chunkier – for a bit of texture variation.

Drizzle with olive oil and sprinkle Red Dukkah over the salad.

Gently toss everything together to coat evenly.

Top with fresh basil leaves or whatever green herbs you have on hand – parsley or thyme both add a nice, fresh finish.
