Grilled Green Asparagus with Lemon and Red Dukkah

Grilled Green Asparagus with Lemon and Red Dukkah

GRILLED GREEN ASPARAGUS (side dish for 4 people)

No green asparagus on hand? No worries – swap in carrots, cauliflower, or whatever veggies you have in the fridge. Red Dukkah plays well with almost anything.
Serve it as a starter, as part of a mezze spread, or alongside grilled fish, meat, or your favorite BBQ dishes.

INGREDIENTS

Green asparagus (you can also use white asparagus, cauliflower, or carrots)
1 lemon
A little oil
Red Dukkah
Salt
Fresh dill

DIRECTIONS

Preheat the oven on grill setting – or use your outdoor grill.

Rinse the asparagus and snap off the woody ends.

Place them on a baking tray, toss with oil and lemon juice, and sprinkle generously with Red Dukkah and a little salt.

Grill until lightly golden and still with a bit of bite.

Top with fresh dill and serve while warm.

Serve them just as they are – or give them a little extra love with creamy burrata on top, some new potatoes on the side, or a slice of toasted bread with hummus.
