Fish:
1 whole fish, e.g., seabass, mackerel, trout
1 tbsp Mermaid’s Bite
1 tsp Pyramid salt
1 small bunch of parsley
2-3 slices of lemon
Potatoes:
1 kg small potatoes
Smoked paprika
Pyramid salt
Oil
Grilled Vegetables:
4-5 types of vegetables, e.g., carrots, courgettes, spring onions, green asparagus
Dressing:
1 tbsp mustard
1 tbsp vinegar
1 pinch Pyramid salt
½ dl neutral oil
1 tsp honey
1 tbsp Mermaid’s Bite
Garnish:
1 bunch of fresh herbs

Grilled Fish:
Rinse and clean the fish, then pat it dry with paper towels. Make 3-4 slashes on each side of the skin. Rub the fish inside and out with Mermaid’s Bite and salt. Stuff the fish with parsley and lemon slices, and let it rest in the fridge for 30-60 minutes. Grill the fish indirectly for about 20 minutes.
Grilled Veggies and Smoked Potatoes:
Boil the potatoes for 6-7 minutes and grill them until tender in a foil tray. For a smoky flavor, add wood chips to the grill or toss the potatoes with a pinch of smoked paprika, a bit of oil, and some salt. Serve them hot from the grill.
Dressing:
Whisk together the mustard, salt, and vinegar. Gradually whisk in the oil, then add the honey and Mermaid’s Bite. Let the dressing sit for 30 minutes.
Cut the vegetables into bite-sized pieces and grill them until tender but still with a bit of bite. Toss the warm vegetables in the dressing and arrange them on a platter. Garnish with fresh herbs.
