Green Goddess Salad with Crispy Rice

Our Green Goddess salad has already proven that green salads can easily steal the spotlight. In this version, we’ve added some crunch with crispy rice, but it’s still Cabbage Karma that ties everything together.

The aromatic spice blend gives the dressing depth, balance and a subtle kick, enhancing the fresh herbs and vegetables to something truly special. Combined with crispy rice, the salad becomes fresh, creamy and crunchy all at once. It works just as well on its own or alongside your favourite protein - a perfect example of how far a good dressing and the right spices can take you.

Green Goddess Salad with Crispy Rice

GREEN GODDESS SALAD WITH CRISPY RICE (side dish for 4 people)

This recipe makes approximately 600–800 g of finely chopped greens.

INGREDIENTS

Crispy Rice:
200 g cooked, cooled rice
1 tbsp sesame oil
1 tbsp soy sauce

Dressing:
200 ml natural yoghurt or Greek 10%
Juice of ½ lemon
1 tbsp Cabbage Karma
2 tbsp olive oil
1 shallot, roughly chopped
1 tsp Italian Garlic (fresh garlic can be used)
300 ml chopped fresh greens such as parsley, spinach, basil, or a mix
A handful of nuts (approx. 30 g) – cashews, almonds or hazelnuts
1 tsp honey (optional)
1 tsp salt

Green Goddess Salad:
1 cucumber, diced
½ pointed cabbage
2 avocados, diced
A handful of sugar snap peas, sliced

DIRECTIONS

Crispy Rice:
Preheat the oven to 200°C (fan). Spread the cooked rice in a thin layer on a baking tray lined with parchment paper. Drizzle with sesame oil and soy sauce and mix lightly. Bake for 15–20 minutes, turning occasionally, until the rice is crispy and golden.

Dressing:
Make the Green Goddess dressing by blending all dressing ingredients in a food processor or with a hand blender until smooth and creamy. Taste and adjust with salt or extra lemon if needed.

Assemble the Salad:
Place the cucumber, cabbage, avocado, crispy rice and sugar snap peas in a large bowl. Toss with the Green Goddess dressing so everything is well coated. Divide into bowls and top with protein if desired.

The salad is at its best when it’s really creamy. Serve on its own or with meat, fish, bread, or your favourite sides.
