How hot is hot, and how is it measured?

The Scoville scale is a scale used to measure the pungency of a specific chili pepper. The pungency, or heat, is measured in SHU (Scoville Heat Units) based on the concentration of capsaicin in the chili pepper.

Cayenne pepper                    = 30,000 – 50,000

Chipotle is a smoked chili pepper grown in Chihuahua in Mexico. Chipotle is made of medium-hot Jalapeño chilies (2,500-10,000 on the Scoville scale) that are ripened on the bush until they are deep red in colour and wrinkled. The chili is then dried for several days in wood-fired smoking chambers. The flavour is a combination of heat, fruit and smoke, which is typically used in sauces, salsas and marinades. You can also use Chipotle Chili to sprinkle on your egg dishes or on hot chocolate, drizzled on whipped cream.

Jalapeño is one of the world’s most popular chilis. The fruit of the Jalapeño pepper is sweet with fine green notes, while the strength comes from around the seeds and stem. Despite its moderate heat (2,500 – 10,000 on the Scoville scale), Jalapeño chili flakes give a spicy kick to your everyday dishes without burning the palate. Try dried Jalapeño flakes in your guacamole or use them as a spicy topping on foods that need a flavour boost.

Cayenne pepper is a finely ground chili powder at the strong end of the Scoville scale. It is one of the oldest and best-known types of chilis on our latitude. Cayenne pepper is strong (30,000 – 50,000 on the Scoville scale) and should therefore be used in small doses. Our cayenne pepper is grown organically in Spain, where it is called Pimenton Picante. Cayenne pepper is most often used in meat, poultry and stews, but is also ideal for fish and shellfish.
