Dressing:
2 dl yoghurt
2 tsp Rasta Pasta
1/2 tsp salt
1-2 tsp honey
1 clove finely grated garlic
1 tsp light vinegar
2 tbsp finely chopped mango (can be replaced with other fruits like strawberries)
Grilled Corn:
3 corn cobs
Olive oil
Salt and pepper
1 handful fresh coriander
Spicy Yoghurt Dressing:
Mix all the ingredients for the dressing in a bowl. Start with a small amount of Rasta Pasta seasoning; you can always add more to spice it up, but you can’t take it down!
Grilled Corn:
Brush the corn cobs with olive oil and season with salt and pepper. Preheat the grill. Place the corn on the grill and cook for about 10-15 minutes, turning regularly until tender.
Arrange the grilled corn on a plate, drizzle with the spicy yoghurt dressing, and sprinkle with freshly chopped coriander.
