Dough:
25g yeast
5 dl milk
A pinch of saffron
100g sugar
1 large egg
1 tsp ground cardamom
15g pyramid salt
1.1 kg Manitoba flour
100g butter

1 egg

Dissolve the yeast in the cold milk. Grind 1 tbsp of sugar with the Saffron and stir it into the milk. Add the egg, cardamom, sugar, and salt.
Gradually add the flour while mixing on medium speed until the dough comes together. Start by adding 1 kg of flour, and if the dough is too sticky, add 50–100g more. Knead the dough for 5–7 minutes until it’s smooth, elastic, and detaches easily from the sides of the bowl or the work surface.
Cut the butter into small pieces and knead it into the dough until it becomes smooth and glossy. Let the dough rise for 1.5 hours.
Once the dough has risen, shape the buns by tucking the dough underneath to form a smooth bottom. Optionally, arrange them in a baking tray so they can rise together. This recipe makes about 20 buns.
Let the buns rise for another hour at room temperature. Preheat the oven to 220°C (430°F). Once risen, brush the buns with a beaten egg.
Bake the buns for 10-12 minutes, or until golden. Allow them to cool on a rack.
