ROASTED ROOT VEGETABLES (side dish for 4 people)

Sometimes, we all face the same challenge: preparing a large batch of roasted root vegetables only to eat the same dish on repeat throughout the week. By day four, the thought of another serving can feel a little uninspiring. But everyday meals should be quick, easy, and full of flavor - without spending hours in the kitchen.

With this recipe, you'll enjoy simple, delicious roasted root vegetables – with a twist. By varying the toppings, you can turn one batch into three unique dishes, making leftovers anything but boring.

INGREDIENTS

Root Vegetables
1 bag beets
1 bag potatoes
1 bag parsnips
1 bag carrots
Optional: red onions
2 tbsp Happy Roots
1 tbsp oil
1-2 tsp coarse salt

Serving 1
2 large tbsp Greek yogurt or crème fraîche
50 g crumbled feta
A handful of fresh parsley

Serving 2
½ tub hummus (chili hummus optional)
1 tbsp toasted sesame seeds

Serving 3
1-2 handfuls arugula
1 tbsp balsamic vinegar or glaze
Pomegranate seeds

DIRECTIONS

Root Vegetables:
Wash, peel, and cut your favorite root vegetables into your desired size and place them on a baking tray. Add Happy Roots, salt, and oil, and toss everything together. Roast in the oven at 400°F (200°C) for about 40 minutes, depending on the size of the vegetables.

Serving 1:
Spread a few tablespoons of Greek yogurt or crème fraîche on a plate, add the roasted root vegetables, and top with crumbled feta and fresh parsley.

Serving 2:
Spread half a tub of hummus – chili hummus if you like it spicy – on a plate, add the roasted root vegetables, and sprinkle with toasted sesame seeds.

Serving 3:
Place a few handfuls of arugula in a serving dish, add the roasted root vegetables, drizzle with balsamic vinegar or glaze, and finish with pomegranate seeds.

Tip! You can use any of our spice blends this way. Choose your favorite vegetables, toss with 1-2 tbsp of spice blend, and roast until tender.
