Rasta Pasta - Mill & Mortar Style

HOT PASTA WITH VEGETABLES (serves 4, or perfect as a side dish)

This simple yet stunning dish can be made with a variety of colorful vegetables, and works as both a side and a main course. Whether paired with light meats, fish, or served with bread, Rasta Pasta will spice up your meal in the most flavorful way. And with a little Bob Marley in the background, you’ve got yourself a celebration on a plate!

INGREDIENTS

500 grams of pasta
300 grams of mixed vegetables in Rasta colors (red, yellow, and green), such as bell peppers, zucchini, and spring onions
1 tbsp Rasta Pasta
2 tbsp neutral-flavored oil
Pyramid salt, pepper, vinegar, and sugar
A generous handful of chopped fresh herbs (such as parsley or cilantro)

DIRECTIONS

Cook the pasta according to the package instructions. In a hot wok, quickly sauté the Rasta Pasta and vegetables in the oil.

Add the cooked pasta to the hot vegetables and toss everything together. Season with salt, pepper, a splash of vinegar, and a pinch of sugar.

Stir in the fresh herbs.

Tip! Rasta Pasta can also be served cold as a pasta salad, perhaps with a little sour cream for extra creaminess. You can also use Rasta Pasta as a rub for light meats or fish, or add it to your sauces and soups for a flavor boost. It pairs wonderfully with coconut milk-based dishes.
