Lucia Buns with Saffron

A Swedish Christmas tradition, these beautifully shaped buns deserve a place on every festive table. With their rich, buttery texture and subtle sweetness, they are simply irresistible.

Lucia Buns with Saffron

SAFFRON BUNS (12-14 pieces)

A touch of Saffron is all it takes to transform simple dough into something truly magical. To unlock its full flavor and vibrant golden hue, let the delicate strands steep in a little hot water before adding them to the dough. This releases their essential oils, infusing the buns with a rich aroma and the vibrant golden glow of the buns. Now, let's bake!

INGREDIENTS

50 g butter
2½ dl milk
½ g Saffron (approx. ½ tsp)
25 g fresh yeast
½ tsp salt
1 dl sugar
1 egg
7 dl all-purpose flour
Raisins for decoration
1 extra egg for brushing

DIRECTIONS

Start by preparing the Saffron. Lightly crush the delicate strands in a mortar and pestle or between your fingers, then place them in a small bowl and pour over 3–4 tablespoons of hot water. Let them steep for at least 15 minutes - longer if possible - to fully release their flavor and color.

Meanwhile, melt the butter in a saucepan, add the milk, and warm the mixture until it reaches body temperature (about 37°C/98°F). Crumble the yeast into a large bowl and pour the warm milk mixture over it, stirring until dissolved. Add salt, sugar, Saffron (along with its liquid), and the egg, mixing until well combined.

Gradually incorporate the flour, kneading until the dough is soft, smooth, and elastic. It should be pliable but not sticky. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 45 minutes, or until doubled in size.

Once risen, divide the dough into 12–14 equal portions. Roll each piece into a thin rope and shape them into traditional Lucia bun designs, such as an “S” or other classic patterns. Place a raisin in the center of each spiral and arrange the buns on a baking sheet lined with parchment paper.

Cover the shaped buns with a towel and let them rise for another 20–30 minutes. Meanwhile, preheat the oven to 200°C (390°F).

Brush the buns with a beaten egg to give them a beautiful golden sheen. Bake for 8–10 minutes, or until lightly golden and fully baked through. Transfer to a wire rack and let them cool slightly before serving - best enjoyed warm with a little butter.
