Happy Roots Dip

Craving something crispy and golden? Try these Hasselback fritters – thinly sliced potatoes baked to perfection and served with a generous drizzle of Happy Roots seasoning. The combination of the creamy dip and the perfectly seasoned, crispy potatoes will have your taste buds dancing!

Happy Roots Dip:
2 dl sour cream (18%)
2 tsp Happy Roots seasoning
1/4 tsp salt
1 tsp honey

Hasselback Fritters:
4 potatoes
Wooden skewers (or grilling sticks)
2 tbsp olive oil
1 tsp Happy Roots seasoning
Flaked sea salt
Fresh flat-leaf parsley, finely chopped

Happy Roots Dip:
Mix all the ingredients for the dip together and serve. This sauce is perfect for chips, French fries, new boiled potatoes, or anything else that needs a creamy white sauce.

Hasselback Fritters:
Peel the potatoes if necessary.

Slice the potatoes into 1 cm thick slices. Place them in water before and after cutting to prevent discoloration and remove excess starch.

Place a potato slice between two wooden skewers. Make vertical cuts with a 1 mm gap along the slice. Turn the potato and make diagonal cuts across the vertical ones. Turn again and make another set of diagonal cuts in the opposite direction.

Soak the sliced potatoes in cold water while preparing the rest. Mix the Happy Roots seasoning with olive oil or melted butter. Remove the potatoes from the water, pat them dry.

Brush the potatoes with the seasoning mixture. Place them on a baking tray. Bake in a preheated oven at 200°C (392°F) for about 40 minutes, flipping halfway through, until they are crispy and golden.

Sprinkle with flaked sea salt and finely chopped flat-leaf parsley. Serve with the delicious Happy Roots dip.
