Gringo-Filled Tortillas

Gringo-Filled Tortillas

TORTILLAS WITH BEAN OR CHICKEN FILLING (serves 4)

Here’s an easy and tasty recipe to get you started, but don’t hesitate to experiment with whatever ingredients you have on hand or your favorite go-to veggies.

A "quick and tasty" option is to sauté some onion in oil, add Gringo (about 1-2 teaspoons per 250g of filling), and then throw in your choice of chicken breast, minced beef, fish chunks, beans, chickpeas, or vegetables. Don’t forget to season with salt to taste! Once your filling is ready, load it into your tacos, tortillas, lettuce wraps, or cabbage wraps, and top with vibrant salsa, guacamole, fresh veggies, and herbs. Gringo is your secret weapon, and it’s hard to go wrong when making colorful, feel-good Mexican food.

INGREDIENTS

8 flour or corn tortillas
1 chopped red onion
2 teaspoons Gringo
4 tomatoes
200g chicken breasts
200g cooked kidney beans, soaked
Salt

DIRECTIONS

Heat some oil in a pan and sauté the onion with Gringo and the chicken pieces. Chop the tomatoes into cubes and add them to the pan. Let it simmer for 10 minutes, then add the beans.

Serve the warm filling in a slightly heated tortilla along with:

Guacamole – avocado, lime juice, cilantro, and optionally salad onions and salt
Tomato Salsa – chopped tomatoes, spring onions, cilantro, and optionally salt
Cucumber/Mango Salad – diced cucumber and mango with lime juice
Radishes – thinly sliced
Pickled Red Onions (find the recipe online)
Corn on the cob – boiled and cut into pieces
Fresh cilantro
