Falafel Waffles with your favorite Toppings

FALAFEL WAFFLES (4 pieces)

These crispy, flavorful Falafel Waffles are a healthy twist on a classic favorite, packed with chickpeas and aromatic spices. Top them with whatever you love - your imagination is the only limit!

Whip up 4 delicious waffles with this recipe.

INGREDIENTS

Falafel Waffles:
1 can chickpeas
2 eggs
1 garlic clove
1 tbsp tahini
3 tsp Hey Falafel spice blend
Fresh parsley
Salt and pepper

Topping Suggestions:

Option 1:
Finely shredded cabbage
Coriander
Carrots
Nigella seeds

Option 2:
Avocado
Pomegranate
Fried halloumi
Dukkah

Option 3:
Tabouleh
Feta
Tahini

DIRECTIONS

Drain and rinse the chickpeas, letting them drain in a sieve. Add them to a food processor with the other ingredients and blend until smooth.

Preheat your waffle iron and grease the plates with a little neutral oil. Spoon a couple of tablespoons of the batter onto each waffle plate, close the waffle iron, and cook for about 5-6 minutes, until golden. Don't open the waffle iron before 5 minutes!

Serve with a dip or dressing. Try mint yogurt dressing, tahini dressing, chili sauce, tzatziki, or hummus. You can serve it as a "build your own" meal or plate it up.
