Falafel Waffles:
1 can chickpeas
2 eggs
1 garlic clove
1 tbsp tahini
3 tsp Hey Falafel spice blend
Fresh parsley
Salt and pepper

Drain and rinse the chickpeas, letting them drain in a sieve. Add them to a food processor with the other ingredients and blend until smooth.
Preheat your waffle iron and grease the plates with a little neutral oil. Spoon a couple of tablespoons of the batter onto each waffle plate, close the waffle iron, and cook for about 5-6 minutes, until golden. Don't open the waffle iron before 5 minutes!
Serve with a dip or dressing. Try mint yogurt dressing, tahini dressing, chili sauce, tzatziki, or hummus. You can serve it as a "build your own" meal or plate it up.
