BURRITO BOWL (serves 4)

INGREDIENTS

Filling:
2 onions
4 garlic cloves
2 cans kidney beans
2 tbsp tomato paste
4 tbsp Gringo Taco
800 g canned chopped tomatoes
Pyramid salt
Black pepper

To Serve:
200 g rice
4 tomatoes
1 red onion
2 avocados
4 tbsp sour cream
1 lime for garnish
Fresh coriander or parsley for garnish

DIRECTIONS

Start by finely chopping the onion and garlic. Drain and rinse the kidney beans under cold water.

Heat a pan with some oil. Add the onion and garlic, and sauté until soft.

Next, add the beans and Gringo Taco spice mix, stirring well. Add the chopped tomatoes and let it simmer for 10-15 minutes, while you prepare the rest. Taste and adjust with salt/pepper and additional Gringo Taco seasoning if you like it spicier.

Cook the rice according to the package instructions. Dice the tomatoes, red onion, and avocado. Cut the lime into wedges.

Finally, assemble your bowls by placing rice at the bottom, followed by the bean mixture, tomatoes, red onion, avocado, and a dollop of sour cream. Garnish with fresh coriander or parsley and serve with lime wedges.
