Apple Strudel Pancakes with True Cinnamon

APPLE STRUDEL PANCAKES (16 pancakes)

Our true cinnamon, is something truly special. It has a fine, sweet warmth and a delicate aroma. When combined with sweet apples, roasted almonds, and soft pancakes, it elevates the flavor to new heights – giving your desserts a little extra something!

INGREDIENTS

Pancakes:
2 eggs
250 g all-purpose flour
500 ml milk
2 tbsp butter

Apple Filling:
4 green apples
50 g brown sugar
50 g raisins
50 g sliced almonds
1 tsp True Cinnamon

Vanilla Sauce:
250 ml cream
50 g sugar
2 egg yolks
Vanilla powder

DIRECTIONS

Pancakes:
Mix flour and salt, add half of the milk, and stir until smooth. Whisk in the eggs, then add the remaining milk until the batter is runny. Fry the pancakes in butter and keep warm.

Apple Filling:
Cut the apples into cubes and mix with lemon zest and the juice of the lemon, raisins, sugar, cinnamon, and sliced almonds. Sauté briefly in butter.

Vanilla Sauce:
Heat the cream until it almost boils. Whisk the egg yolks with sugar and vanilla, then slowly add the hot cream, stirring well. Gently heat until the sauce thickens.

Serving:
Fill the pancakes with the apple mixture, fold them over, and dust with powdered sugar. Serve with vanilla sauce.
